Since I found out my son has gluten and lactose allergies I had to re-learn how to cook and shop. During this “learning phase” I stopped baking desserts for 3 years, seriously! I ended up buying gluten free desserts….. I seriously could not find any desserts that tasted good. Why does all gluten free desserts taste like cardboard? Ya’ll know what I’m talking about. Total yuck!! So, you can imagine the request I’ve gotten from my family to come up with a recipe for a Pumpkin Pie they can enjoy. I’ve finally came up with a recipe that got my families approval and no doubt, yours will love it too! In fact your family won’t even know it’s gluten and lactose free.
This classic Paleo Pumpkin Pie is delicious, just like your grandma’s traditional pumpkin pie! A buttery, paleo pie crust filled with creamy dairy free pumpkin custard baked to perfection for a delectable perfect holiday dessert. Gluten free, grain free, Paleo Pumpkin Pie, family approved!

Pie Filling Ingredients:
- 3/4 cups organic granulated sugar
- 1¼ teaspoon ground cinnamon
- ½ teaspoon salt (I prefer Himalayan Salt)
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon pumpkin pie spice
- 2 Large eggs
- 1 can Farmer’s Market Foods, Organic Canned Pumpkin, 15 oz
- 1 can organic unsweetened coconut milk 13.66 fl. oz (I prefer Thai Kitchen coconut milk, it has no preservatives or additives & has only 3 ingredients)

Step by Step Instructions
Step 1
MIX sugar, cinnamon, salt, ginger and cloves in small bowl
Step 2
Beat eggs in large bowl.
Step 3
Stir in pumpkin and sugar-spice mixture.
Gradually stir in coconut milk
Step 4
Pour into pie shell (see above for recipe)
Step 5
BAKE in preheated 425° F oven for 15 minutes.
Reduce temperature to 350° F and bake for 40 to 50 minutes more or until knife inserted near center comes out clean.
Step 6
Cool on wire rack for 2 hours.
Serve immediately or refrigerate. Top with non dairy whipped cream
