Cassava, also known as yuca, cassava is a delicious root vegetable that becomes the perfect alternative for wheat. This game-changing, gluten-free, grain-free, nut-free, paleo flour with the taste and texture of wheat is an excellent alternative. Cassava Flour subs 1:1 by weight in many of your favorite recipes, without tedious alterations.
So I decided to try it in my banana zucchini bread recipe. The result, was a perfect loaf so delicious, you’ll forget it was flourless. Yup, it’s gluten free, but full of flavorful, moist and delicious. It’s just perfect for snacks, breakfast or with that afternoon coffee.
If you have a few overripe bananas, don’t toss them, I suggest you try this recipe.
INGREDIENTS
2 large very ripe bananas, mashed
4 eggs (room temperature)
1½ cups grated zucchini
1 tsp pure vanilla extract
5 tbsp maple syrup
5 tbsp brown sugar
1 cup *Cassava flour
1 tsp cinnamon
¼ tsp salt
1 tsp baking soda
*Use conversion chart for substitute
*you can substitute 1 cup cassava for ½ cup coconut flour and ½ cup almond flour
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- Spray a loaf pan with non-stick cooking spray.
- In a medium bowl, mash bananas until smooth (some lumps or okay).
- Add eggs and beat together with banana using a whisk or fork.
- Mix in grated zucchini, vanilla and maple syrup.
- In a separate bowl, mix together the cassava flour, cinnamon, salt and baking soda until all lumps are gone.
- Pour dry ingredients into wet and mix until combined.
- Bake for 55-60 min or until a toothpick inserted comes out clean.
Who doesn’t love warm banana bread slathered with butter? As soon as I take out the loaf, I love to rub a stick of Irish Butter on the top of the loaf.
ADD ON
Here are some suggestions:
- raisins
- carrot
- chopped walnuts
- chopped pecans
- mini or regular chocolate chips
NOTES
For muffins, simply pour the batter into a greased muffin tin or 12 silicone baking cups. Bake for 40-45 min at 350 degrees F.
